Far Breton is a traditional cake or dessert from the Brittany region in France. Its base is similar in composition to a clafoutis batter : a flan-style eggs-and-milk custard with flour added. Prunes or raisins are common additions.

Ingredients : 8 servings
- 1 teabag
- 125 gr Corinth raisins
- 400 gr Agen prunes
- 4 eggs
- 250 gr flour
- 20 gr white sugar
- 40 cl milk
- 10 gr butter
- icing sugar
- a pinch of salt
Step 1
In a bowl, pour warm water over tea. Soak raisins and prunes to make them swell for 1 hour.
Step 2
Drain raisins and prunes. Remove the stones from prunes.
Step 3
Preheat the oven 200°C.
Whisk the eggs. In a large bowl, combine flour with salt and sugar, and stir. Add the eggs, then the milk and blend until the mixture is even.
Step 4
Finally, add raisins and prunes and stir again.
Step 5
Butter a 24 cm diameter cake pan, 4 cm high sides. Pour the batter into the cake pan and bake for 1 hour (until sides are puffed and brown and knife inserted into center comes out clean). Cool cake completely in pan on rack.
Step 6
Just before serving, top with icing sugar. Serve cold.
